Sweet Saffron Lassi Recipe
I simply LOVE lassi's ~ always have. I remember vividly the first time I went to India discovering an ENTIRE lassi street stall in Rishikesh.. oh the flavours!
Interestingly, did you know that there's a fundamental difference between yoghurt and drinking a lassi in Ayurveda? Yoghurt on its own has the qualities of sweet, sour and is heating (ushna virya) with sour after-taste (vipaka).
Yoghurt will increase inflammation and should ideally not be consumed during the Spring, Summer or Autumn Seasons, however LASSI will break down inflammation and is great for oedema.
Recipe✨
1 1/2 cups yoghurt
1 1/2 cups water
1 tbsp cold-pressed local honey
1/2 tsp ground cinnamon
1/2 tsp freshly ground green cardamom seeds
1 pinch saffron fronds
a pinch of salt
2 ice cubes
Combine all the ingredients in a blender and pulse until smooth and frothy
Add more saffron to taste
Pour into 2 large glasses and serve
