Sweet Saffron Lassi Recipe

 

I simply LOVE lassi's ~ always have. I remember vividly the first time I went to India discovering an ENTIRE lassi street stall in Rishikesh.. oh the flavours!

Interestingly, did you know that there's a fundamental difference between yoghurt and drinking a lassi in Ayurveda? Yoghurt on its own has the qualities of sweet, sour and is heating (ushna virya) with sour after-taste (vipaka).⁠

Yoghurt will increase inflammation and should ideally not be consumed during the Spring, Summer or Autumn Seasons, however LASSI will break down inflammation and is great for oedema.⁠

Recipe⁠✨

1 1/2 cups yoghurt⁠
1 1/2 cups water⁠
1 tbsp cold-pressed local honey⁠
1/2 tsp ground cinnamon⁠
1/2 tsp freshly ground green cardamom seeds⁠
1 pinch saffron fronds⁠
a pinch of salt⁠
2 ice cubes⁠

Combine all the ingredients in a blender and pulse until smooth and frothy⁠

Add more saffron to taste⁠

Pour into 2 large glasses and serve⁠
