Carrot + Celery Soup Recipe

Sweet and astringent, this simple Celery & Carrot Soup supports the nervous system. Celery is also an excellent blood cleanser thats ideal to support our physical health in Spring.

Ingredients:
- 2-3 tbsp ghee
- 1 tsp ajwain seeds
- 1 tbsp chopped ginger
- 1 tsp chopped turmeric
- ½ white onion, thinly sliced
- 1 tsp chopped garlic
- 2-3 medium carrots, roughly chopped
- 6 celery stalks, roughly chopped
- 3-4 cups water
- salt, to taste
Process:
- Heat the ghee in a medium saucepan until hot, then add the ajwain seeds and fry for a minute
- Add the chopped ginger & turmeric and stir for another minute before adding the onion
- Continue to cook the onion until very soft and golden, then add the garlic, carrots and celery and stir til they start to sweat
- Add 3 cups of water to start and a pinch of salt, bring to the boil then reduce to a simmer for thirty minutes
- Add another cup of water if needed and leave on the stove on a low simmer until almost ready to serve
- Use a stick blender to break up any large chunks of veg or to desired consistency
- Add some optional fresh herbs & voila!
For a not-so-cleansing addition, add a dollop of sour cream or a slice of toasted sourdough & butter🤤
